It’s been a little quiet on my end this week on account of the fact that I am on vacation!
Yes! That’s right, I’m spending the first week of winter break on the beach. Check it out:
Okay, so it’s a little gray. The first full day we were here, the weather was perfect. I napped in the sun and it was like all my dreams were coming true all at once. Yesterday was a little chillier, but today promises to warm up! The cooler weather hasn’t dampened my enthusiasm, though — I’m just pleased as punch to be at the beach.
We’ve eaten out a lot, which is nice — if a little draining on my bank account, haha! Our general plan is eat one meal out per day. I’ve been making some excellent lunch sandwiches, though.
This sandwich in particular is encapsulated by two slices of toasted sourdough bread. One slice has mayo on it and the other slice has hummus on it. The filling is, as you can tell, arugula, mushrooms, a couple of thick slices of tomato, cucumbers, and feta cheese. Add a little black pepper in there and you’ve got a sandwich worthy of being eaten on vacation.
I’ve also had some really delicious food when we go out to eat, but what I want to share with you the most is the Thai noodle soup from Harbor Docks. If you ever find yourself out in the Destin area of Florida, make it a point to go to Harbor Docks for lunch and get their noodle soup. I got the kind with shrimp — I always get the kind with shrimp. This noodle soup is so good that I have dreams about it when I’m not in Florida.
You get a HUGE bowl of soup filled with noodles, sprouts, shrimp, and other assorted good things (fried garlic! So good!). Make sure to ask for the condiment caddy so that you can customize your soup to your tastes. I dig adding a dollop of the roasted chilis in oil and roasted peanuts for some added texture. Finish it off by squeezing the lime over top the soup and man — it’s heaven. I’m already plotting when we can go a second time so that I can get my hands on another bowl of this soup.
I have this weird habit of going to Florida on winter breaks and coming back home with sweaters. It’s so great.
We’ve got until Friday for our vacation and I can’t wait to experience it all.
